Pellegrino Services is proud to have partnered with Alliance College, Australia’s first nationally accredited hospitality school, to design and outfit their new commercial cooking training kitchen. The project entailed fitting out 2 training classrooms, each equipped with 15 commercial cooking stations, complete with demonstration areas, plating areas, dishwashing facilities, and ample storage space for dry goods, perishables and kitchen equipment.
The build presented several challenges, including the installation of high-pressure gas lines and a new grease trap while the college remained fully operational. As the training rooms were located on the ground floor of a nine-story building, traditional ducted ceiling ventilation systems were unsuitable and the team at Pellegrino installed a specialist ventilation and exhaust system to effectively remove heat, smoke and cooking odours.
Throughout the project, Pellegrino Services maintained close communication with the client and facilities management team, conducting necessary JSA (Job Safety Analysis) and risk assessments to ensure the health and safety of all involved. Despite these challenges, the project was completed on schedule and within budget, within a 8 week timeframe.
